Banana Ice cream 2

OK, so I'm aware of the fact that it's really going to look like I can't make anything except salad and ice cream but never mind.
I also realise Louise has already posted a banana ice cream recipe, but this is a recipe for the proper, unhealthy thing, none of that nothing-but-fruit rubbish =) (just joking, that's great too)

This was actually an early present for Louise's birthday (what better gift than the gift of food?). We all know how much Louise loved bananas so I thought she'd appreciate it.

I did a bit of research to find out why ice cream with curds comes out so much more ice-creamy (as in, it's more creamy than if you simply use fruit and cream). I believe the answer is in the eggs. According to the website I found, eggs (specifically egg yolks) play several roles in ice cream:
1) consisting mainly of fat and protein, they help to make ice cream soft and creamy (the fat bit - as fat freezes differently to water). They also make the ice cream more smooth, by preventing water molecules from forming large ice crystals (the protein part).
2) eggs act as an emulsifier, enabling water (the fruit bits) and fat (the cream) to bind together. This makes a thicker and creamier ice cream.
3) egg yolks also improve the stability of the ice cream, reducing its tendency to melt before you can eat it! This also improves the shelf/freezer-life of ice cream

OK, enough of the science...

Another point to note is that I pretty much made the quantities etc. up but it tasted pretty good.

Makes: one rectangular tub of ice cream
Time: 10 minutes (or less) to make and then 4-5 hours freezing
Ingredients:
- 300ml of double cream
- 300ml of Greek/natural yoghurt
- 3 tablespoons of honey
- jar of banana curd
- 2 actual bananas

Method:
1. Whisk the double cream until it has thickened but doesn't quite form stiff peaks
2. Fold in the yoghurt, honey and banana curd
3. Chop and add the banana
4. Pour into the tub and put in the freezer. Every hour or so, mix it around (if possible)
5. Take out of freezer 10-15 mins before serving.
6. Serve with cones, banana chips, chocolate, sprinkles, you name it!
