Apple and Honey Squares

As if we haven't had enough apple this year, here's another apple recipe!! These are very sweet, and best served warm-ish. They are quite similar to the apple cake, but more of a bake than a cake.

Apple and Honey Squares
Prep time: 30 mins
Serves: Makes 12
Cooking temp: Gas 6, 200C
Cooking time: 30-35 mins

Ingredients
175g self raising flour
1tsp baking powder
75g caster sugar
Zest of one lemon (finely grated)
1 medium egg
6tbsp milk
2tbsp vegetable oil
450g dessert apples
25g butter (melted)
50g caster sugar
1/2 tsp vanilla essence
2 tbsp. warm honey (clear)

Method
  1. Preheat the oven. Line a 27cmx18cm baking tin with greaseproof paper.
  2. Sift the flour and baking powder into a bowl. Stir in the sugar and the lemon zest.
  3. In a cup, whisk the egg with the milk and oil and add to the bowl.
  4. Beat until smooth, and pour/spoon into the tin.
  5. Peel, core and chop the apple into thin slices. Layer over the batter.
  6. Brush the apple with the melted butter.
  7. In a very small bowl, mix the sugar and vanilla essence, and sprinkle over the apple bake.
  8. Bake until the top is golden. Cool for 4 minutes.
  9. Smother in the honey and cut into 12 squares to serve.
You can eat this warm or cold. If you want to freeze it, don't put on the honey or cut it. Wrap in foil and it will keep for 3 months in a freezer. To use, thaw and brush with honey (and heat up in a microwave if desired) and cut up.
